This is part of Sebastián Ramírez’s El Placer project. If you’ve been paying attention to progressive coffee over the last few years, you’ll have seen his name come up again and again. This one’s loud. Pink. Juicy. Slightly chaotic in the best way. Think fruity, almost cotton-candy sweetness with a big, rounded mouthfeel that keeps shifting as it cools. It’s the kind of coffee that doesn’t sit still, and doesn’t really want to be pinned down.

Tucked into the hills of Quindío, El Placer is less a single farm and more an evolving ecosystem. Sebastián Ramírez took his father’s small plot and pushed it somewhere new, building a network of farms focused not just on yield, but on character. There’s a strong experimental edge here. Co-ferments, controlled drying, mosto fermentations, they’re not afraid to push things if it means unlocking something interesting in the cup. No shortcuts. A lot of curiosity.
